Ingredients:
- 1 whole chicken, cut into pieces
- 2 cups white rice
- 6 cups water or chicken broth
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional)
- 1/4 cup chopped parsley or herbs of choice
- 1/4 cup chopped scallions
- 1/4 cup butter
Directions:
- In a large pot, bring the chicken and water (or chicken broth) to a boil. Reduce heat and let it simmer until the chicken is cooked through, about 30-45 minutes.
- Remove the chicken from the pot and let it cool. Remove the skin and bones, and shred the meat.
- In the same pot, add the rice, onion, bell pepper, garlic, salt, black pepper, and red pepper flakes (if using). Bring to a boil, then reduce heat and let it simmer, covered, for about 20 minutes.
- Add the shredded chicken to the pot, along with the parsley, scallions, and butter. Stir well to combine and let it simmer for another 10 minutes.
